Thin Mint Truffles
Yummy! I can't decide if I like these or the Oreo truffles more...I guess I'll just have to try a few more to decide ;)
What you need:
1 box Girl Scout Thin Mints
4 oz cream cheese
1 pkg of vanilla candy coating
Green food coloring
What to do:
Crush/blend/food process the thin mints (works better if they are frozen). Dump crushed cookies into a mixing bowl. Mix in the cream cheese. Form small balls and place on a wax paper covered cookie sheet. Stick them in the fridge while melting the candy coating in the microwave. Place truffle balls in melted candy coating and spoon some on top to completely cover the truffles. Place truffles back on cookie sheet. Add green food coloring to remaining candy coating and place in a baggie. Cut off one bottom corner of the baggie and squeeze your design on top. Place back in fridge to set.
1 box made 27 truffles for me.
I wish I had more cookies to make another batch...guess I'll have to wait until cookie season comes back around :)
