Tangy Fruit Salad and Angel Food Cake
Lately I have been obsessed with Angel Food cake with some sort of fruit mixture on top or beside it. I got tired of fruit with no juice to be soaked up so I was bad and added strawberries soaked in sugar water. Now let me tell ya that was deeeeelish, but so original that I still wanted to try something else. To add a little kick to a normal fruit salad I mixed honey, lime and a tiny bit of sugar together and ta-da I have an awesome (healthier than normal) dessert.
Here's what I used:
1/2 a carton of strawberries
1/2 a carton of blue berries
1/2 a bag of green grapes
1/4 cup of honey
2 large limes (juice only)
1 1/2 teaspoons of sugar
What I did:
Wash and cut all fruit and place in mixing bowl or plastic container. Combine honey and lime juice and mix well then pour over your fruit. Sprinkle sugar all over fruit and then toss to coat everything. Stick in fridge for at least an hour before serving. Serve over Angel Food cake, yogurt, or eat by itself.
This made a lot of juice for the amount of fruit I used, but I like a lot of juice. It's also a bit tangy, kind of like a strawberry limeade...mmmm (now I want to go get a strawberry or cherry limeade from Sonic). If you don't like a lot of tang or juice, I would only use one large lime (or two small limes).
Enjoy!
