April Meal - Chicken Teriyaki

My first ever crock pot meal! This was very rich and very delicious! I found this recipe over at Just Get Off Your Butt and Bake (click HERE for the recipe). As you can see I put the chicken over steamed white rice and added a side of garlic pepper green beans for my veggie (these are my favorite green beans ever!).

What I changed from the recipe:
  • only 3 chicken breasts
  • no red pepper flakes
  • onion powder instead of an onion
  • garlic powder instead of minced garlic
I ended up cooking the chicken on high for 2 hours while I sat back and watched a movie.

I will definitely be making this again. I can't wait to eat the leftovers...yum!

Elmo Pinata

Isn't Elmo cute?!?! This is my third pinata and I think it just might be my favorite one! :) I made this for Erica's son's 2nd birthday. I did this one a little different from the others. First, I tied the string it hangs on in between the first and second layers. Second, I did a third layer just to be safe since all the candy will be a smaller "container". Third, I wanted to make sure Elmo looked "shaggy" so I fringed the crepe paper.

Fringe equals FUR!

He looks so happy :) Hope it makes the birthday boy happy too

Hangin' Tough...NKOTB anyone?

Green Monster Smoothie

I've been wanting to try one of these for a while and finally got around to making one over the weekend.

Mine consists of:

2 cups baby spinach
1 banana
3/4 cup unsweetened almond milk
1 spoonful of peanut butter
1 individual container of Okios greek yogurt in vanilla (I think it's 4.5 oz)

I blended everything together and ta-da green monster smoothie. The banana is really powerful so it tasted just like a banana smoothie. I think next time I will add a few strawberries and blueberries to the mix.

Have you tried one? If you have, what did you put in yours?

Thin Mint Truffles

Yummy! I can't decide if I like these or the Oreo truffles more...I guess I'll just have to try a few more to decide ;)

What you need:

1 box Girl Scout Thin Mints
4 oz cream cheese
1 pkg of vanilla candy coating
Green food coloring

What to do:

Crush/blend/food process the thin mints (works better if they are frozen). Dump crushed cookies into a mixing bowl. Mix in the cream cheese. Form small balls and place on a wax paper covered cookie sheet. Stick them in the fridge while melting the candy coating in the microwave. Place truffle balls in melted candy coating and spoon some on top to completely cover the truffles. Place truffles back on cookie sheet. Add green food coloring to remaining candy coating and place in a baggie. Cut off one bottom corner of the baggie and squeeze your design on top. Place back in fridge to set.

1 box made 27 truffles for me.

I wish I had more cookies to make another batch...guess I'll have to wait until cookie season comes back around :)

The Hunger Games

Source

Me likey! Ha ha. Woke up even earlier and bought tickets online just in case it was sold out again by the time we got to the theater. When we got to the theater there was hardly anyone there, but it was a full house by the start of the movie. I saw several people ask other people if they could scoot down so their group could all sit together...I've never had the guts to ask someone that...I don't like talking to strangers...ha ha...stranger danger!!

Anyways back to the movie...

I haven't read any of the books in this series yet, so I went in knowing nothing which I loved! It's nice not having to sit there and compare every little aspect of the movie to the book. I thought it was cast really well. Even Lenny Kravitz did really well in his part. And Elizabeth Banks is unrecognizable, but so good! I'm pretty sure this was the first time I've ever seen Jennifer Lawrence and she was exceptional as Katniss Everdeen.

What I don't get is why they have promoted Liam Hemsworth (or Mr. Miley Cyrus) so much. He was in it for a whole 5 minutes maybe. I'm sure he has more to do with the other books, but that was just weird to me.

I have to say I'm really excited to see the other movies now. I'm debating if I want to try and read the books first or not.

Have you seen the movie or read any of the books? Are you going to do either if you haven't?

March Meal - Honey Lemon Chicken

I cut it close again, but was able to make a new recipe last Thursday for my March meal. I found the recipe over at How Sweet It Is (her blog has some amazing recipes). I really liked this chicken. It reminded me a lot of Chickfila's chicken nuggets, but less greasy. The only complaint I have with this recipe is my own cooking. I'm always nervous that the chicken won't be done, so I let a couple of pieces get really dark :( The dark pieces don't make very pretty pictures...see below.

I will probably make this again, but I might try baking the chicken verses frying it (I'm much better at baking chicken, plus baking doesn't make my kitchen smell like oil for an entire day after cooking).

Anyone else find frying to be a little stressful and lingering?
