Pinata Cupcakes


For Cinco de Mayo I wanted to make a festive dessert like I did last year (click here to see). I had seen the pinata cookies and the pinata cake pictures floating around pinterest and blogland so I decided I wanted to make pinata cupcakes. I made a short trip to my local Bed Bath and Beyond to pick up a cupcake corer and then to the grocery store for white cake mix, icing, sprinkles and mini M&Ms as the candy surprise!

**side note...the super cute and festive wrappers were given to me by my Aunt for my b-day last year...on the bottom it says eat more cake!!**

Making the pinata cupcakes is pretty simple. Make the cupcakes according to the box and let cool completely. Once cool, use your corer to take out the middle of each cupcake (but don't go all the way to the bottom more like 3/4 the way down). Fill the middle with mini M&Ms or whatever small candy you would like and then put the cored out piece back on. You might need to cut off some of the cored piece or smush it down really good. Top each cupcake with icing and sprinkles. Enjoy!


If you share these with say your friends/co-workers, don't tell them what's inside...let it be a little surprise :) Oh and because I did bring these to work my friend sent me this "some e-card"...


I think she found out my evil plan...ha ha. However, I eat just as many as everyone else :) That's why I have to share or I would eat all 24!! ha ha.
