March Meal: Chicken Broccoli and Rice



I've been craving chicken and rice for a while now so I went to trusty ol Pinterest to find me an easy recipe. I pinned this recipe a while ago, but it stood out to me because it's only a 15 minute meal.



I made a few modifications so for the original recipe click here.

I used:

7 chicken tenders
1 14oz box of instant brown rice
1 can reduced fat cream of chicken soup
2 heads of broccoli
1 cup water
1 T veggie oil
1/4 tsp Cayenne pepper
1/4 tsp garlic pepper
Salt and Pepper on the chicken

What I did:

Sprinkle the chicken with salt and pepper and place in a warm 10 inch skillet with oil. Cook on each side for about 5 mins (I like to make sure my chicken is fully cooked). Take chicken out and add the cream of chicken soup, water, garlic powder and Cayenne pepper. Stir and bring to a boil. Add in rice and broccoli. Stir. Place chicken on top and cover for another 5 minutes. Voila! You're done.

I really enjoyed this recipe, except I would definitely season the chicken more next time...I'm thinking cajun seasoning...and I would use white rice. While I like brown rice just fine, I think the white rice would be fluffier.
