In honor of national pancake day last Tuesday (Feb. 28th) I made veggie pancakes for dinner.
I really wanted to make these using yellow squash and zucchini, but I had to settle with a different kind of squash (it started with a C) since the grocery store was out of both.
I based my recipe off of this
one. Since I don't like onions I used onion powder and also added garlic powder. I used about half a cup of flour as well. These were pretty good and I definitely plan on making them again.
