So a little back story...my family does not buy fish from the store anymore, except tuna. I know weird. A few years ago my dad and brother decided to go fishing up in Canada and brought home a lot of fish that when we ran out they booked another trip. We eventually ran out again and so off they went for a third time to catch our fish...ha ha. This time my brother ended up catching a 60 pound halibut and when they got back my dad gave me a few fillets...yay! Halibut is probably my favorite fish because it doesn't taste fishy. Anyways...back to the food...
Once again I decided I wanted to try a healthier starch option and had seen spaghetti squash being used in the blog-o-sphere so I decided to give it a shot! (I had to even go back to the store for it because the first time they were completely out!)
This is by far my favorite fish seasoning. I believe you it hails from Williams Sonoma.
I rubbed the fish down with a little bit of olive oil then generously sprinkled on the potlatch seasoning. Then I popped it in the oven for 25 mins at 350 degrees F. I cooked it for 25 instead of 20 because one piece was really thick and still a little frozen.
The fish came out great! As did the broccoli, but the spaghetti squash...not so much. I followed directions I found on pinterest that said you could bake it like a potato in the microwave instead of waiting forever for it to be done in the oven. So I poked the squash all over and stuck it in the microwave for 10 mins (the directions said 8 but I was like ehh I like 10 better). Turns out 10 might not have been enough. What little I could get out was still crunchy and I was very confused on what all was considered the seed area. I mean I saw the seeds and could pick them out one by one, but the part around them was really soft unlike the outer part so yeah...whatever...ha ha. I still ate what I put on my plate with a little but of garlic salt and Parmesan cheese. Overall the spaghetti squash was way more edible than the cauliflower incident.
