Quick and easy dinner on a hot, rainy, summer night. Plus I got to try out my skills on photographing ugly food...ha ha
The recipe comes from The Cooking Connection at H.E.B (please excuse the food splatter)
It's not a bad recipe at all especially if you don't handle spicy well. However, I like spice in my life so here's what I would do differently...
- Only use half the jar of soup and use hot enchilada sauce for the rest
- Use rotisserie chicken meat
- Add avocado on top once cooled
