Mexican Tortilla Casserole


Quick and easy dinner on a hot, rainy, summer night. Plus I got to try out my skills on photographing ugly food...ha ha

The recipe comes from The Cooking Connection at H.E.B (please excuse the food splatter)


It's not a bad recipe at all especially if you don't handle spicy well. However, I like spice in my life so here's what I would do differently...
  1. Only use half the jar of soup and use hot enchilada sauce for the rest
  2. Use rotisserie chicken meat
  3. Add avocado on top once cooled
